Our sausage curing and smoking process are also what makes us a gourmet sausage. We cure and smoke our choice cuts of meat differently from nation sausage brands. They are quick and use a lot of preservatives to cure their sausages. At Wisconsin Fresh Gourmet sausage we take our sweet time curing and smoking our sausages in our super-secret sausage pits.
